If you have monitor with resolution under 1920 x 1080p , here are some tips :
If you get a "no signal" error due to a wrong resolution of Sekiro, you can press Alt+Enter to enter into a Windowed mode of the game. Now you are able to see the actual game but in Windowed, so go to the Settings and change the game from Windowed to Fullscreen (this will take you back to that "no signal" error) but now you should press your "right" button on your input device to blindly select the option "Keep" (because the game will ask you if you want to revert to your previous settings).
Now press "down" or whatever button your input device has to select the Resolution setting. The Resolution setting is just below Screen Mode setting so it means you only have to press "down" once to select it.
(Take note that you are doing all these without any visuals because you aren't receiving signals from the game after all)
While on the resolution settings, keep pressing "up" to select a resolution you know your display supports then press your select button. You will then be asked if you want to keep the current settings, so again press "right" to select on "Keep". After doing all these blindly, you can now congratulate yourself for fixing a problem you can't see.
